Follow very quiet backroads through deep gorges and sunny wine-producing villages. Pass the ingenious 'Canal du Midi', cycling below steep high cliffs and through lush Mediterranean vegetation. Spend the night in the small but beautiful town of Lagrasse. Take the opportunity to taste sparkling wine in Limoux, birthplace of real 'champagne'. Last but not least, enjoy the splendid vistas from fortresses like those of Quéribus and Peyrepertuse, remnants of the mysterious Cathar people.
